Hầu hết trong các món bánh Âu: bánh ngọt và các sản phẩm nở nhờ men phải dùng bột mì mà không dùng các loại bột khác? Bạn hiểu bột mì như thế nào để chọn đúng sản phẩm phù hợp với món bánh mình làm?
Để làm bánh ngon, bạn cần phải hiểu rõ về các nguyên liệu mà mình dùng trong các món bánh. Một loại nguyên liệu chủ yếu rất bình thường đó là bột mì. Vậy chúng ta hãy tìm hiểu rõ chi tiết về bột mì nhé!
1.BỘT MÌ
1.1. Cấu to hạt lúa mì:
Hạt lúa mì có 3 phần chính: vỏ, nội nhũ và phôi mầm.
Vỏ:là một bộ phận bảo vệ cho phôi và nội nhũ khỏi bị tác động cơ học cũng như hóa học từ bên ngoài. Thành phần chủ yếu của vỏ là cellulose, hemicellulose, lecithin. Vỏ không có giá trị dinh dưỡng, ảnh hưởng xấu đến chất lượng bột mì nên trong quá trình chế biến phải tách bỏ lớp vỏ đi. Vỏ hạt bao gồm các thành phần sau: vỏ quả, vỏ hạt, lớp aleuron.
+ Vỏ quả: Gồm một vài lớp tế bào chiếm 4-6% khối lượng toàn hạt. Lớp vỏ quả của hạt lúa mì mỏng, cấu tạo không được chắc như vỏ trấu của thóc nên trong quá trình đập và tuốt, vỏ dễ bị tách ra khỏi hạt.
+ Vỏ hạt: Chiếm 2 – 2,5% khối lượng hạt, gồm hai lớp tế bào, lớp ngoài là những tế bào xếp khít với nhau chứa các sắc tố, lớp trong gồm những tế bào không màu ít thấm nước. Vỏ hạt có cấu tạo rất bền và dai. Nếu dùng lực xây xát khô thì khó bóc vỏ do đó trong sản xuất bột mì người ta phải qua khâu làm ẩm và ủ ẩm.
+ Lớp aleuron
+ Lớp aleuron nằm phía trong các lớp vỏ, được cấu tạo từ một lớp tế bào lớn có thành dầy. Lớp aleuron chứa protein, chất béo, đường, celluloza, tro, và các vitamin B1, B2, PP.
Nội nhũ:
Nội nhũ lúa mì chiếm 82% khối lượng toàn hạt, là phần chủ yếu để sản xuất ra bột mì. Nội nhũ là phần dự trữ chất dinh dưỡng của hạt, chứa tinh bột và protein. Ngoài ra trong nội nhũ còn có một lượng nhỏ chất béo, muối khoáng và vitamin.
Nội nhũ cấu tạo nên chất xơ của hạt lúa mì, chứa khoảng 70-75% tinh bột. Bột mì tách từ nội nhũ thì trắng đẹp; bột mì tách từ nội nhũ và một phần từ lớp aleuron thì có màu trắng ngà, có nhiều chất dinh dưỡng và khó bảo quản.
Có 2 loại protein quan trọng trong phần nội nhũ: glutenin và gliadin. Khi bột mì được nhào trộn với nước, glutenin và gliadin hình thành một mạng lưới gluten. Vì vậy, lúa mì là loại ngũ cốc phổ biến có chứa đủ glutenin và gliadin cho sự hình thành gluten chất lượng tốt để làm những loại bánh có cấu trúc nở xốp cao.
Khác với các hạt hòa thảo khác, lúa mì có phía lưng và phía bụng. Phía lưng là phía phẳng và có phôi còn phía bụng có rãnh lõm vào dọc theo hạt.
Cấu tạo bên trong hạt lúa mì cũng giống các hạt hòa thảo khác gồm: vỏ, lớp alơrông, nội nhũ và phôi mầm.
Tỷ lệ khối lượng từng phần hạt lúa mì (theo % khối lượng toàn hạt)

+ Cực tiểu : 78,33
+ Cực đại: 83,69
+ Trung bình: 81,60
– Lớp aleuron:
+ Cực tiểu : 3,25
+ Cực đại: 9,48
+ Trung bình: 6,54
– Vỏ quả và vỏ hạt:
+ Cực tiểu : 8,08
+ Cực đại: 10,80
+ Trung bình: 8,92
– Phôi:
+ Cực tiểu : 2,22
+ Cực đại: 4,00
+ Trung bình: 3,24
Hạt mầm: là phôi của việc nảy mầm hạt lúa mì. Những điều kiện đúng đã định sẵn, hạt mầm sẽ nảy mầm và phát triển thành một mầm non mới. Mầm của hạt lúa mì có cấu trúc rất nhỏ so với hạt lúa mì ( khoảng 2,5 %) nhưng nó có chứa hàm lượng protein cao ( khoảng 25 %), chất béo, vitamin B, E và các khoáng chất. Những dưỡng chất này quan trọng cho việc nảy mầm của hạt mầm. Vì mầm lúa mì giá trị dinh dưỡng, nên có thể được thu hoạch và thêm vào để làm bánh.
Phôi chiếm khoảng 3,24% khối lượng hạt, là phần phát triển thành cây con khi hạt nảy mầm. Trong phôi có khá nhiều chất dinh dưỡng chủ yếu gồm có 35% protein, 25% các glucid hoà tan, 15% chất béo, vitamin và enzyme.
1.2.Thành phần hoá học của hạt lúa mì
Ngoài các chất trên, trong lúa mì còn có dextrin, muối khoáng, sinh tố, men và một số chất khác. Các chất này phân bố không đều trong từng phần của hạt:
– Protein chủ yếu tập trung ở nội nhũ và lớp aleuron.
– Chất béo, celluloza, pentoza và tro tập trung ở vỏ.
– Đường và chất béo tập trung trong phôi.

a) Protein:
Hàm lượng protein của lúa mì dao động trong khoảng khá lớn từ 9,6 – 25,8%. Ngoài protein còn có một lượng nitrogen phi protein chiếm khoảng 0,033 – 0,061%.
Protein lúa mì gồm albumin, globulin, gliadin và glutenin; trong đó gliadin và glutenin chiếm khoảng 75% lượng protein của lúa mì. Khi nhào với nước, gliadin và glutenin sẽ trương lên tạo thành một khối dẻo đàn hồi gọi là gluten.
Loại lúa mì khác nhau thì lượng gluten sẽ khác nhau. Ðối với lúa mì bình thường thì lượng gluten tươi chiếm khoảng 20-25% khối lượng hạt. Gluten màu sáng xám, đàn hồi, độ giãn đứt cao.
Thành phần hóa học của gluten phụ thuộc loại giống và chất lượng lúa mì. Trung bình trong gluten sấy khô chứa khoảng 85% protein, 2-3 % chất béo, 2% chất khoáng và khoảng 10-12% glucid.
Ðể đánh giá chất lượng gluten người ta dùng các chỉ số sau:
Màu sắc: Gluten tốt có màu sáng đôi khi xám hoặc hơi vàng, gluten xấu có màu xám.
Khả năng hút nước của gluten: Gluten tốt có khả năng hút nước cao, vì vậy sau khi xác định gluten tươi phải xác định lượng gluten khô. Bình thường gluten tươi chứa 65¸75% nước.
Ðộ đàn hồi: Là tính chất rất quan trọng của gluten. Độ đàn hồi thể hiện khả nãng giữ khí của bột.
Độ căng đứt: Đặc trưng cho khả năng giữ khí của bột.
Sự thay đổi thể tích gluten khi nướng: Là chỉ số quan trọng đặc trưng độ nở của gluten.
Ðể đánh giá chất lượng protein của lúa mì không những phải chú ý đến hàm lượng và chất lượng gluten mà về mặt dinh dưỡng cần phải chú ý tới thành phần amino acid của protein nữa.
b) Glucid:
Trong thành phần của lúa mì có nhiều glucid, trong đó tinh bột chiếm từ 48¸73%, ngoài ra còn có lượng đường khử từ 0,11- 0,37%, sacaroza 1,93 – 3,67% và maltoza 0,93 – 2,63%.
c) Chất tro:
Trong lúa mì có một lượng nhỏ chất tro chủ yếu là P, Ca và Mg. Chất tro được phân bố không đều trong từng phần của hạt.
d) Chất béo:
Hạt lúa mì có một lượng nhỏ chất béo. Theo Ivanop thì sự phân bố chất béo trong hạt chủ yếu tập trung ở phôi và cám còn nội nhũ rất ít. Thành phần chất béo của lúa mì bao gồm acid béo no và không no ( palmitic acid, stearic acid, oleic acid, linoleic acid…).
Hàm lượng chất béo trong từng phần của hạt lúa mì ( theo % chất khô)
* Hạt và sản phẩm chế biến:
– Hạt:
+ Khoảng dao động:1,42 – 3,20
+ Trung bình:1,92
– Bột trắng (lõi bột của nội nhũ):
+ Khoảng dao động:0,82 – 1,44
+ Trung bình:1,18
– Cám (lớp aleuron và vỏ):
+ Khoảng dao động:3,68 – 6,78
+ Trung bình:5,12
– Phôi:
+ Khoảng dao động:7,14 – 15,80
+ Trung bình:8,76
e) Vitamin:
Trong lúa mì có một lượng vitamin gồm vitamin A, nhóm B, H, E, K và một vài loại khác.
Vitamin A, B1, B2, B3, E… chủ yếu tập trung ở phôi hạt vì vậy nhà sản xuất thường dùng cám mì để sản xuất các vitamin này. Ngoài những chất trên, trong lúa mì còn có một lượng chất men như amylase (men phân giải tinh bột amilaza), men thủy phân protein, men oxy hóa khử, lipaza…
Bột hoặc dạng bột có thể được định nghĩa là kết quả của sự nghiền hoặc xay hạt tinh bột, hạt, củ, hoặc cây họ đậu. Trong thời kỳ đồ đá, bột đến từ ngũ cốc, được nghiền nát bằng cách sử dụng các loại đá và nghiền bằng tay, khá thô và bở.
Người Ai Cập cổ đại đã dùng đá được đục đẽo và có hình dạng khuôn mẫu để nghiền ngũ cốc và sản xuất bột tốt hơn. Khoảng 6.000 năm tiếp theo, các trục lăn thép phát minh ra đời, trong nửa sau của thế kỷ XIX, đã được sử dụng để nghiền bột giúp sản xuất bột tốt hơn nữa, nhiều hơn nữa như những gì chúng ta thấy ngày nay. Các máy rây cũng được sử dụng kết hợp với các trục lăn thép để loại bỏ càng nhiều cám và mầm càng tốt.
